乳酸菌

乳酸菌（英文名：Lactic Acid Bacteria）是指發酵糖類主要產物為乳酸的一類無芽孢、革蘭氏染色陽性細菌的總稱。細胞形態為桿菌或球菌，過氧化氫酶陰性，無運動性或極少，菌落為乳白色。廣泛存在於動物腸道、植物降解物、製品及食品中，可適應各人生存環境並和其他微生物之間形成共生關係。有微好氧菌和專性厭氧菌。根據細胞為球狀或桿狀，可分為乳酸鏈球菌族和乳酸桿菌族。 1857年，法國微生物學家L.巴斯德在研究乳酸發酵過程中發現了乳酸菌，而後不斷髮現分離新物種，直至20世紀60年代對乳酸菌的分類工作才趨於確立。 主要用於製造酸奶、乳酪等發酵食品、飼料新增劑及保健食品等。具有調節腸道菌群，生物防腐等功能，一些產細菌素或胞外多糖的乳酸菌可用於醫藥、食品及化妝品等領域。
