7.加入一大勺雞湯,煮開;

要點:
1.因為山藥內酚類物質接觸空氣中的氧氣被氧化生成了帶有顏色的醌類物質,要不變色與空氣不直接接觸即可,比如泡在水裡。在去皮洗淨的山藥里加上一小掇鹽拌一下,這樣去皮後的山藥就不會發黃變色了。但也不一定,我就買到一種山藥,一去皮就馬上氧化;
2.給山藥去皮後手感覺很癢,原因是山藥皮裡的皁角素弄得手部非常癢,我們可以把手仔細洗乾淨,然後把手沾滿醋,連指甲隙縫都沾,過一會兒這種癢感就會漸漸消失!(原因:酸鹼中和)也可以在火上烤一下,反覆翻動手掌,讓手部受熱。這樣能分解滲入手部的皁角素。或者事先做好準備工作,可以事先先把山藥在火上烤一下;
3.這些食材都不適宜長時間烹煮,時間越久營養流失地也多。

It’s not difficult to admire Miss Maynell’s wisdom. The truenature of a heart is seen in it’s response to the unattractive.
