金針菇（學名：F. velutipes，別名：冬菇、樸蕈、絨毛柄金錢菌）是一種口蘑科金錢菌屬植物，主要分佈於中國、日本、俄羅斯、歐洲、北美洲、澳大利亞等地。 金針菇子實體一般比較小，多數成束生長，肉質柔軟有彈性；菌蓋呈球形或扁半球形，菌蓋表面有膠質薄層，溼時有粘性，色白至黃褐。菌肉白色，中央厚，邊緣薄，菌褶白色或象牙色，較稀疏，長短不一，與菌柄離生或彎生。金針菇是秋冬與早春栽培的食用菌，以其菌蓋滑嫩、柄脆、營養豐富、味美適口而著稱於世，特別是涼拌菜和火鍋的上好食材，其營養豐富、清香撲鼻而且味道鮮美，深受大眾的喜愛。
