桂林米粉的製作過程簡單易學。先把米粉泡到熱水裡,待到米粉軟後並把它撈起來放到乾淨的碗裡。吃的時候再把它放到熱湯裡湯一下然後再撈出來,放上金黃的花生、火紅的辣椒粉,翠綠的蔥花,薄薄的肉片和清鮮的骨頭湯,再加一些特製的配料。這樣一碗桂林米粉就大功造成了。
聞一聞,香噴噴、辣辣的味道撲鼻而入,真是讓人口水飛流三千尺。夾起粉來,吸一口滾圓的米粉立馬進入你口中、咬一咬、嚼一嚼,酸酸的豆角拌上圓溜溜的米粉,再加上可口的湯水,那味道棒極了!順便夾上一顆金黃的花生,咬一咬“咯咯”的清脆聲直響,滿口的花生香味拌上剛才的米粉味,這感覺真是讓人回味無窮!

桂林米粉的製作方法是:先將米淘淨,用清水浸泡幾天,然後將米磨成米漿,放到屋外晒乾,和成粉團後將粉煮熟,再使勁搗煮熟後的粉團,使之變得極有筋力、不易斷碎,最後用壓榨機將粉團壓榨成一根根韌性極好的米粉條,再捲成小團(每團約2兩),即完成。
