醬油

醬油是中國傳統的調味品。用豆、麥、麩皮釀造的液體調味品。色澤紅褐色，有獨特醬香，滋味鮮美，有助於促進食慾。 醬油是由醬演變而來，早在三千多年前，中國周朝就有製做醬的記載了。而中國古代勞動人民發明醬油之釀造純粹是偶然地發現。中國古代皇帝御用的調味品，最早的醬油是由鮮肉醃製而成，與現今的魚露製造過程相近，因為風味絕佳漸漸流傳到民間，後來發現大豆製成風味相似且便宜，才廣為流傳食用。而早期隨著佛教僧侶之傳播，遍及世界各地，如日本、韓國、東南亞一帶。中國醬油之製造，早期是一種家事藝術與秘密，其釀造多由某個師傅把持，其技術往往是由子孫代代相傳或由一派的師傅傳授下去，形成某一方式之釀造法。 2017年12月1日，《公共服務領域英文譯寫規範》正式實施，規定醬油標準英文名為Soy Sauce。
