黑木耳（拉丁學名：Auricularia auricula(L．exHook．)Underw，英文名：Fungus，別名：木菌），木耳科木耳屬真菌，主要分佈於黑龍江、吉林、福建、江蘇、臺灣、湖北、廣東、廣西、四川、貴州、雲南等地，生長於闊葉樹的腐木上，單生或群生。 新鮮的黑木耳呈膠質片狀，半透明，側生在樹木上，耳片直徑5~10釐米，有彈性，腹面平滑下凹，邊緣略上卷，背面凸起，並有極細的絨毛，呈黑褐色或茶褐色。其乾燥後收縮為角質狀，硬而脆性，背面暗灰色或灰白色；入水後膨脹，柔軟而半透明，表面附有滑潤的粘液。
