據文獻記載,早在5000多年前,中國已有烤肉、烤魚等食品。商朝伊尹五味調和,周朝出現稱為“八珍”的名饌,對後世很有影響。漢魏南北朝時期,中國菜餚迅速發展,名菜大增。漢代婁護髮明的“五侯鯖”,即是中國最早的雜燴菜。馬王堆一號漢墓出土的竹簡上記有菜餚上百款。北魏賈思勰撰寫的《齊民要術》中,載有200多種菜餚。由於佛教的傳入和流行,加之南朝梁武帝的提倡,佛教齋食逐步在社會上產生影響,使中國早已出現的素菜得到進一步發展。隋唐五代時期,中國的花色菜、食療菜也有新的發展。
