英語版的蔥油餅做法
中文:
材料: 2杯麵粉, 1/2杯開水, 1/4杯冷水, 8湯匙油, 1/2茶匙鹽, 2湯匙蔥蓉.
做法:
1. 把開水慢慢倒入麵粉, 邊倒邊用筷子稍微攪拌.
2. 把冷水也倒入麵粉, 用手把麵粉揉成一個光滑的麵糰. 蓋上溼毛巾醒30分鐘.
3. 工作臺上撒滿面粉, 把麵糰揉幾分鐘.
4. 把麵糰檊成一個大面團, 越薄越好, 大概比厚水餃皮厚一點.
5. 如果想吃軟餅就在麵糰上抹一層油, 做出來的蔥油餅分很多層, 每層象紙一樣薄; 如果不抹油餅的層次不很分明, 但是比較勁道, 有嚼頭.
6. 在麵糰上均勻地撒滿鹽和蔥蓉.
7. 從一邊開始卷麵糰, 捲成一個像舊式望遠鏡形狀的長圓筒.
8. 用手把麵糰分成四份. 麵糰中間部分厚, 每段可以短一點; 兩邊薄, 就長一點.
9. 把每份麵糰開口處用手捏合. 兩隻手同時握住一塊麵團, 把麵糰捏細.
10. 兩隻手握住同一份麵糰的兩端, 向相反方向擰, 象擰麻花一樣, 邊擰邊往中間靠攏, 形成一箇中間厚, 兩邊薄的粗矮圓筒.
11. 用擀麵棍把麵糰擀薄, 從麵糰中間向邊上擀, 擀得比厚水餃皮稍微厚一點. 把多餘的麵粉抖掉.
12. 把爐子開得比中火稍大一點, 用大約2湯匙油把一份餅煎成金黃色.
心得:
1. 油, 鹽, 和蔥的份量是大概的, 可以根據個人的喜好調整.
2. 最好用細蔥. 蔥蓉越細越好.
3. 煎餅不要用大多油, 翻餅的時候小心不要被油濺到臉上.
4. 不分層的蔥油餅煎的時候用油少一點, 外表看起來很油.
5. 煎好的餅用衛生紙包著蘸乾淨油健康一點.
6. 煎的時候蔥油餅會鼓起像油條一樣的氣泡. 我沒有見過雞蛋灌餅, 但是讀過有關的食譜, 可能把大的氣泡挑破, 倒入雞蛋液就行了
