白菜（學名：Brassica pekinensis Rupr.），十字花科蕓薹屬植物，素有“菜中之王”的美稱。中國白菜(Brassica chinensis)又稱中國芥菜、小白菜、不結球白菜。 白菜原產於中國北方，南北各地均有栽培，十九世紀傳入日本、歐美各國。其有寬大的綠色菜葉和白色菜幫，多重菜葉緊緊包裹在一起形成圓柱體，大多數會形成一個密實的頭部，被包在裡面的菜葉由於見不到陽光綠色較淡以至呈淡黃色。 在過於寒冷的北方還有另外幾種冬季儲存白菜的方法，如在朝鮮北方和中國東北東部醃製朝鮮冬菜，在中國東北西部、內蒙東部和河北北部寒冷以前又缺乏食鹽的地區習慣用漬酸菜的方法等儲存白菜。
