黃瓜（huáng guā），（學名：Cucumis sativus L），也稱胡瓜、青瓜，葫蘆科甜瓜屬植物，一年生攀援草本。 中國各地普遍能種植黃瓜，現廣泛種植於溫帶和熱帶地區。黃瓜喜溫暖，不耐寒冷，為主要的溫室產品之一。黃瓜莖、枝伸長，有稜溝，被白色的糙硬毛。卷鬚細，具白色柔毛。果實長圓形或圓柱形，熟時黃綠色，表面有刺尖的瘤狀突起。黃瓜具有清熱解毒、健腦安神的功效。黃瓜含有很豐富的纖維素，對於促進人體腸道的運動，具有非常大的好處。 涼拌黃瓜的做法要先將黃瓜切成合適的大小，再調製自己喜愛的調料，放入大碗中充分攪拌即可。
