水稻（拉丁學名：Oryza sativaL.），別名稻、稻子、稻穀，禾本科稻屬穀類作物。 水稻稈直立，高0.5-1.5米，葉鞘鬆散，兩側基部下延成葉鞘邊緣。圓錐花序疏鬆，小穗矩圓形，兩側壓扁，含3小花，兩性小花外稃常具細毛，有芒或無芒，雄蕊6枚。穎果長約5毫米，寬約2毫米。是亞洲熱帶廣泛種植的重要穀物，中國南方為主要產稻區，北方各省均有栽種。種下主要分為2亞種，秈稻與粳稻。亞種下包括栽培品種極多。 2018年8月24日據中國農科院訊息，中國水稻研究所種質創新團隊發現一種新型水稻種質“小薇”，可以像雙子葉模式植物擬南芥一樣，在實驗室內大規模種植和篩選。相關研究成果線上發表於《分子植物》上。
