杏仁（學名：Amygdalus Communis Vas）是薔薇科植物杏的種子，分為甜杏仁和苦杏仁，主要含有蛋白質、脂肪、糖、微量苦杏仁苷，具有軟化皮膚和美容的功效，其中苦杏仁還有平喘止咳，抗擊癌症的作用。 杏仁果長在短距（short spur）上，當果實成熟時會顯露出包在粗糙外殼中的核仁，核仁為黃色且有很多小洞，外殼為堅硬的木質。
