牛肉乾一般是用黃牛肉和其他調料一起醃製而成的肉乾，保持了牛肉耐咀嚼的風味，又久存不變質。牛肉乾中的風乾牛肉源於蒙古鐵騎的戰糧，攜帶方便，並且有豐富的營養，被譽為“成吉思汗的行軍糧”。 其製作方法是將切好的牛肉片倒入碗裡用清水浸泡一個小時，泡好後倒掉血水，把牛肉片的水分擠幹，擠幹後放入切好的蔥和姜，料酒，少量鹽，醃製30分鐘。鍋中倒入油，5成熱時放入辣椒和花椒炒香，調成小火倒入醃製好的牛肉片翻炒，牛肉片炒幹後把備好的調料汁倒入鍋中，繼續翻炒到無湯的狀態即可出鍋。
