銀耳（拉丁學名：Tremella fuciformis Berk.，別名：白木耳），銀耳科銀耳屬真菌，有“菌中之冠”的美稱。它在中國大部分省區分佈。 銀耳是由10餘片薄而多皺褶的扁平形瓣片組成，銀耳子實體純白至乳白色，一般呈菊花狀或雞冠狀；幹後收縮，角質，硬而脆，白色或米黃色；子實層生瓣片表面，擔子近球形或近卵圓形。銀耳在適溼的條件下菌絲才能定植，生長旺盛。

銀耳，中藥材名。4～9月間採收，以5月與8月為盛產期。採時宜在早、晚或陰雨天，用竹刀將銀耳刮入竹籠中，淘淨，揀去雜質，曬乾或烘乾。宜冷藏或貯藏於陰涼乾燥處。功能主治為滋陰，潤肺，養胃，生津。治虛勞咳嗽，痰中帶血，虛熱口渴。
