酵母(學名：Yeast) ，泛指能發酵糖類的各種單細胞真菌，並非系統演化分類的單元。是一種肉眼看不見的單細胞微生物，能將糖發酵成酒精和二氧化碳，是一種典型的異養兼性厭氧微生物。經常被用於酒精釀造或者麵包烘焙行業。 酵母菌細胞寬度（直徑）約2~6μm，長度5~30μm，有的則更長，個體形態有球狀、卵圓、橢圓、柱狀和香腸狀等。酵母菌的生殖方式分無性繁殖和有性繁殖兩大類。
