我家好男兒對菜的口味非常挑剔,所以在家裡我總會變著花樣做,在葷菜裡面,他比較喜歡的是牛肉,魚肉,蝦和雞肉。但是雞肉要做的嫩他才喜歡吃，柴的會有肉渣，而且還會嵌到牙齒裡，那樣的雞肉他不會吃第二口。所以我做雞肉菜，一來要考慮嫩，二來更要考慮做的美味好吃。你看，我不容易啊呵呵！
雞肉肉質細嫩，滋味鮮美，由於其味較淡，因此可使用於各種料理中。蛋白質的含量頗多，在肉之中，可以說是蛋白質最高的肉類之一，是屬於高蛋白低脂肪的食品。鉀硫酸氨基酸的含量也很豐富，因此可彌補牛及豬肉的不足。同時也由於雞肉比其他肉類的維生素A含量多，而在量方面雖比蔬菜或肝臟差，但和牛肉和豬肉相比，其維生素A的含量卻高出許多。很多人現在都不吃雞肉，有的說裡面有激素，當然這不是危言聳聽，可能社會上是曾經查出過問題雞，說到底又是個食品安全的問題，這不是我們普通老百姓所能對付的，有關負責食品安全的部分應該本著尊重生命的原則加強管理，我們不希望今天這個食品明天那個食品相繼出現問題啊！畢竟，老百姓的餐桌上離不開普通的雞鴨魚肉啊！
今天給大家推薦這道泡椒大蒜雞塊。做這道菜的功夫全在準備工作上。首先要醃製雞塊，大蒜要剝好焯水，同時還要調好汁，等一下只要一倒到鍋裡，馬上就好啊！這道菜裡大蒜是整塊的，不用切的，這樣吃，是不是很過癮啊，關鍵是好吃！雞肉醃製過，然後在鍋裡呆的時間又不長，加上調好的汁的滋潤，讓這款雞肉非常鮮嫩多汁，真的是要大力推薦給大家的一道好菜！
原料：雞胸肉 大蒜 泡椒 黑木耳
調料：料酒 檸檬 生粉 鹽 醬油 醋 香油 白糖
做法:
食材的準備和處理
1.雞胸肉清洗乾淨；
2.把雞胸肉切成塊；
3.加入料酒；
4.加入少許鹽；
5.加入生粉；
6.擠入檸檬汁；
7.加入一勺水；
8.加入半勺食用油；
9.抓勻後醃製15分鐘；

10.泡椒清洗乾淨；
11.把泡椒切成小塊；
12.黑木耳提前用水泡發好；
13.黑木耳切成小塊；
14.大蒜剝好；
15.鍋裡燒開水，放入大蒜燒一分鐘拿出備用；
調汁
16.碗裡放少許鹽；
17.加入雞精；
18.加入少許白糖；
19.加入醬油；
20.加入一勺醋；
21.加入香油和水調勻，總體量為大半碗；
開始烹飪22.熱鍋後加油；
23.加入大蒜翻炒；
24.炒到大蒜表面有氣泡為止，小火大概炒兩分鐘；
25.放入雞塊；
26.炒到雞肉變成白色，也就10秒鐘左右；
27.倒入調好的半碗汁，大火燒開；
28.加入黑木耳；
29.加入泡椒翻炒一下就可以出鍋了。
看看做好的雞塊，是不是很嫩吧，而且那個汁水用來拌飯也很不錯啊！
要點提醒：
1.雞肉事先一定要醃製15分鐘左右，一般來講，生粉是必不可少的，是讓肉變嫩的放心添加劑；
2.炒雞塊千萬不能讓其在鍋裡呆很久，雞肉從下鍋到顏色變白是很快的，其實這時雞肉已經四成熟了；
3.調汁就是因為雞肉熟的快，所以可以避免你在炒菜時的慌亂，讓你非常淡定地炒啊；
4.汁水的量是吃飯的碗的半碗多一點，等汁水收的差不多，雞肉也熟透了，要趕緊出鍋；
5.這道菜里加了大蒜，讓雞肉更加好吃的同時，大蒜本身粘了雞肉的鮮美也更好吃了；
6.因為雞肉的烹飪時間短，所以大蒜一要焯水，二要在鍋裡小火煸炒到大蒜表面有氣泡的感覺，那樣才好吃。
營養搭配也蠻要緊，加了黑木耳也給這道菜增色不少，而且黑木耳和泡椒都是很容易熟的，和雞肉搭配真的很好！
味道真的非常不錯！不過任何食品再好吃也不能每天吃，要每天換著花樣吃，今天吃雞肉，明天可以吃魚肉，牛肉！
