就要到元宵節了,在這一天估計家家戶戶都會吃湯圓,北方人叫元宵吧。為什麼元宵節要吃元宵呢?我一查資料才知道。因為元宵節這天定在正月十五,是陰曆年的第一個月圓的日子,元宵的形狀是圓形,又含著一個“圓”字的同音字,象徵著團圓、美滿、吉祥、和睦的家庭,所以人們多取其意,要吃元宵。那為什麼又有“鬧元宵”之說呢?“鬧”就是指熱熱鬧鬧地歡樂一天的意思。因為我國是以農業生產為主,一年中比較清閒的是“冬仨月”,元宵節過後,氣溫逐漸變暖,萬物復甦,冬閒已經過去,就要備好耕作的事宜,不能稍有休閒了,所以元宵節這天歡樂一番,賞燈,猜燈謎,舞龍,活動豐富多彩,這既是一種“放鬆式”的休閒活動,更是表現人們祈求新的一年風調雨順,五穀豐登,用歡樂的笑聲和喜慶的鑼鼓聲,在吉祥的氣氛中,迎接豐收一年的來到。
今天Tony來做五彩芝麻湯圓,給龍年的春節畫上一個圓滿的句號。接下來我家好男兒也要開學了,希望他學習進步,每天都樂呵呵!希望全家人都身體健康,萬事如意!呵呵!給廣大的博友送上一句祝福:明月當空高高照,元宵祝福在微笑,十五湯圓別樣甜,快樂常伴你身邊,祝願大家心想事成,順心如意!
原料:水磨糯米粉500克 南瓜250克 菠菜50克 紫甘藍70克 黑芝麻170克
豬油75克 白糖70克 幹桂花適量
準備好三種蔬菜,先來做南瓜糯米糰
做法:
1.南瓜去皮後切成小塊,蒸鍋里加冷水蒸15分鐘即可;
2.把蒸好的南瓜用勺子碾成泥;
3.取100克水磨糯米粉,慢慢加入200克左右的南瓜泥和成麵糰;
4.50克菠菜切成小段後放入攪拌器加入120水打成菠菜泥後過濾成120克左右的菠菜汁;
5.容器裡放入100克水磨糯米粉,加入80克菠菜汁(微波爐溫熱一下)揉成麵糰;
6.紫甘藍70克,放入攪拌器,加150克水,過濾後得大約110克紫甘藍汁;
7.容器裡放入100克水磨糯米粉,加入80克紫甘藍汁(微波爐溫熱一下)揉成麵糰;
8.芝麻炒熟後打成粉,具體做法可以參考此博文或者這篇博文;
9.容器裡放入100克水磨糯米粉,加入20克芝麻粉放入70克溫水揉成麵糰;
麵糰揉完後還要蓋上保鮮膜醒20分鐘左右,這個時間我們來做芝麻餡:
10.大碗裡放150克芝麻粉,加入70克的白糖(最好是棉白糖),甜度自己可以再調節;
11.加入75克豬油,豬油的做法見此博文;
12.用手攪拌均勻後搓成10克左右的芝麻球,放入冰箱冷凍1個半小時;
是不是可以馬上包湯圓了呢?麵糰不是已經揉好了嗎?哈哈,沒有,麵糰還沒有揉好,水磨糯米粉只用溫水揉做湯圓還不行,因為麵糰有裂縫,這樣容易露餡,所以還要繼續揉麵;
13.從上面揉好的糯米麵團各自取下16克小麵糰,放入水中煮到浮起來,也可以一個個放入鍋中煮;
14.把上面煮過的16克南瓜小麵糰放入南瓜主麵糰裡一直揉到麵糰光滑;
15.把揉好的麵糰分成等量的小劑子;
16.取一個劑子轉成窩形後放入一個芝麻小球;
17.包緊後搓圓;
18.把上面煮好的16克藍色小麵糰放入藍色主麵糰裡揉到麵糰光滑;
19.分成小劑子後同樣方法包制;
20.把上面煮過的16克小綠色麵糰放入綠色主麵糰揉到麵糰光滑;
21.同樣方法包制;
22.把上面煮過的16克黑色芝麻色麵糰放入芝麻主麵糰揉到麵糰光滑;
23.同樣方法包制;
24.把上面煮過的16克白色的小麵糰放入白色主麵糰裡一直揉到麵糰光滑;
25.同樣方法包制;
26.包好後鍋中加水,水燒開後加入湯圓,放一點桂花;
27.再次滾起後加小半碗冷水,再滾後再加小半碗冷水,直到湯圓完全浮起來就好了;
28.吃的時候可以在湯水裡根據自己的喜歡加點糖或者蜂蜜;
看好總結:看似繁瑣,那是因為我做的顏色多,只要你記住比例就可以1.芝麻餡:芝麻粉,白糖和豬油的比例是2:1:1;
2.糯米粉和蔬菜汁的比例是10:8;如果只加水,那麼糯米粉和溫水的比例是10:7;
3.揉好的麵糰還要取下一個小麵糰煮到浮起後要放回原來的麵糰揉到均勻,記住這個小麵糰的量是取原麵糰量的10%就可以了,比如麵糰重100克,那麼取下10克就可以;
4.我這裡總共有500克的水磨糯米粉,但是我做的芝麻球只有23個左右,所以是不夠包的,你可以再多做點芝麻球,還有我覺得南瓜湯圓原味就很好吃,所以就不包餡了。
煮湯圓不破的小巧門:
1.水開後下湯圓,再次滾起後可以加小半碗冷水,反覆幾次,或者滾起後開中小火,不要讓水翻滾,因為這樣會讓湯圓破裂開;
2.湯圓不破的第二個竅門就是兩次揉麵法,就是第一次揉好後,取一塊小麵糰煮熟後放回麵糰繼續揉麵就可以揉出光滑不裂的麵糰。
做好的湯圓放入冰箱冷凍就可以。

In the daytime of the Festival,performances such as a dragon lantern dance, a lion dance, a landboat dance, a yangge dance, walking on stilts and beating drumswhile dancing will be staged. On the night, except for magnificentlanterns, fireworks form a beautiful scene. Most families sparesome fireworks from the Spring Festival and let them off in theLantern Festival. Some local governments will even organize afireworks party. On the night when the first full moon enters theNew Year, people become really intoxicated by the imposingfireworks and bright moon in the sky.
