木耳，（拉丁學名：Auricularia auricula (L.ex Hook.)Underwood），為擔子菌綱，木耳目，木耳科的真菌類生物，是一種真菌，是中國重要的食用菌，有廣泛的自然分佈和人工栽培。 木耳質地柔軟，口感細嫩，味道鮮美，風味特殊，而且富含蛋白質、脂肪、糖類及多種維生素和礦物質，有很高的營養價值，現代營養學家盛讚其為“素中之葷”。木耳的營養價值可與動物性食物相媲美，其含有極其豐富的鐵、維生素K。

木耳（拉丁學名：Auriculariaauricular（L.）Underw.），中藥名，為真菌類木耳科植物木耳的子實體，別名黑木耳，木菌、雲耳等。 木耳子實體膠質半透明，有彈性，薄片耳狀，子實層發達，淡紫褐色。木耳具有補氣養血，潤肺，止血，降壓，抗癌之功效，常用於氣虛血虧，四肢搐搦，肺虛久咳，咯血，衄血，血痢，痔瘡出血，婦女崩漏，高血壓，便秘，跌打損傷等症。虛寒溏瀉者慎服。 木耳做中藥加工方法為夏、秋採集，曬乾或放到烘房中烘乾，溫度由35℃逐漸升高到60℃，烘乾。
